Grand Theft Auto III
Though not really inspired by any Hong Kong movie in particular, this popular game has its share of Triad shenanigans. I have created an Andy Lau skin for the game (pictured above) -- click here to download it, and then put it into the "skins" folder for the game.
Wandering around the Chinatown area, I came across this sign, which is a nice little nod to Sammo Hung (Sammo's name is usually spelled "Samo" by Europeans).
